This is the recipe cycling in and out of my 5-gallon barrel on a Solera program. This is the September, 2016 recipe, to be exact.

The recipe has "evolved" a little. It originally had a lot of pilsner malt in it, but that malt leads to a big load of diacetyl in the final, aged product, so I've switched to pale. The original was also fairly light in color, and the dark munich has brought it around to the dark, reddish brown I expect from the style.

The barrel initially got a Roselare pitch, and the second batch came with a Brett pitch (records are hazy as to which strain). That has been evolving ever since. Each new batch gets about a week in the primary with US-05, then mixed into the barrel for its secondary.

Mash Profile

Simple one-stage mash targetting 68.9°C for 60 minutes, sparging with 78°C to get to the desired boil volume.
