This was our second annual holiday-present beer. The idea was to make someting thick and velvety. The result was delicious, but not thick or velvety.

The big problem was in the mash. This was the first outdoor brew on this system in truly cold weather (30's F), and the mash came out far colder than I wanted - 142°F! However, conversion completed, the gravity was decent, and time was short, so into the kettle it went.

There were some issues at bottling time, too. The carbonation in the keg was a little high, so even at low pressure and with chilled bottles, the Beer Gun produced quite a bit of foam. We capped on that foam, but after everything settled, the fill level was down around the shoulders of some of the 22oz bottles. As it turned out, these bottles were still perfectly serviceable in terms of carbonation.

It seems that the best approach would have been to continue filling after the foam hit the rim, until the dark liquid level gets to the appropriate level in the neck. That would involve quite a bit more loss, but the result would look good.
